Sugar and Oil Free Granola Bars

1 Cup dates (soaked)                                      ¼ cup Maple syrup

¼ cup Tahini                                                    1 1/2 cup Rolled Oats

½ tbsp. Cinnamon (or spice of your choice)   ½ cup Pumpkin Seeds (or nuts of your choice)

½ cup Sunflower Seeds (or nuts of choice)    ¼ cup shredded Coconut

¼ cup Cranberries (or dried fruit of choice)   ¼ cup Dried Figs (chopped)

¼ cup dairy free Chocolate Chips                   Pinch of Sea Salt

Heat oven to 350 F.

Add softened dates to food processor and whirl until you get a nice and smooth mix. Add in the Maple syrup and Tahini or any nut butter and blend again till all mixed together. Scrape down sides if you think it needs it.

In a separate bowl mix together the oats with the spices, add everything else except for the chocolate chips (if using) and mix it all till it’s nice and combined. Add chocolate chips and mix again.

Get a 8×8 baking pan and line with parchment paper. Spread mixture out as best you can then flatten out further with damp hands.

Either freeze now or bake.

Put into the oven for 25-30 minutes until it is golden crisp on top. Let it sit for about an hour before taking out of tin and cut it into 16 squares. Store this for at least a week on the counter in an air tight container. They last well in the fridge too. They freeze well, individually wrap and freeze to store them.

John and Charles Enys: Castle Hill Runholders (1864-1891)

This book records the story of two Cornish brothers who owned the Castle Hill sheep station for more than 25 years in the late 19th century. Extracts from letters by both brothers and paintings by Charles that they sent to their family at Enys in Cornwell give a fascinating insight into a lost way of life.

Virtually unknown to New Zealanders, this book records the story of these neglected pioneers who wrote and painted about their adventures. The paintings by Charles Enys – most now in the National Library of Australia – are matched side-by-side in the book by contemporary photographs of the same settings taken by international award-winning professional photographer, John O’Malley. Historic photographs complement the paintings, while other John O’Malley photographs feature the stunning scenery of Castle Hill.

Bishopdale Tramping Club regularly tramp in this area of the Craigeburn Range and Jenny has previously been an active member in the club for many years.

On a clear morning, Christchurch residents have an awesome view across the Canterbury plains to the peaks of the Southern Alps. My self-imposed retirement challenge was to climb all 133 named peaks on a panorama sketch published in the Christchurch Press over 50 years ago. A copy of the sketch is attached to this email.
